Carnival Cruise Line has announced an extensive new dining programme that will introduce a range of restaurants, bars and upgraded food experiences across its fleet, while also debuting several brand-new venues aboard its next generation of ships.

The initiative, called The Next Course, will see new culinary concepts launch on the upcoming Carnival Festivale in 2027 and Carnival Tropicale in 2028, alongside a series of dining enhancements that are already being rolled out across the wider fleet.
The cruise line says the new offerings have been developed using insights gained from serving more than six million guests annually and preparing over 100 million meals each year, giving it a unique perspective on changing dining preferences and emerging food trends.
Carnival formally unveiled the programme during a special event in New Orleans hosted by Chief Culinary Officer Emeril Lagasse, offering guests and industry attendees a preview of the cruise line’s future food and beverage strategy.
“Our approach to dining combined with our team’s amazing service is a driving force behind Carnival’s success,
“Our latest culinary adventure marks a bold step forward to give guests an unforgettable experience with a variety of new vibrant flavors fleetwide.”
Christine Duffy, president of Carnival Cruise Line.
New Restaurants And Bars Planned For Future Ships
Among the headline additions are several new specialty dining venues that will debut on Carnival Festivale and Carnival Tropicale.

Emeril’s Coastal Seafood will bring a menu focused on coastal-inspired dishes created by Emeril Lagasse, while Uku Lei Lei will blend Hawaiian-inspired cuisine with a selection of Asian favourites.

Another new concept, Fetaccine, will offer Mediterranean flavours, combining traditional Italian dishes with Greek specialities.

Carnival Festivale will also be home to Le Bistro Musicale, an exclusive restaurant featuring classic French cuisine served in a Paris-inspired setting enhanced by live music and entertainment.

The ship will additionally introduce several new bar concepts designed to create more immersive onboard experiences.
The Spark is planned as an energetic lounge venue featuring live performances alongside cocktails inspired by famous songs. Mix will allow guests to customise drinks by combining flavours and ingredients to create personalised cocktails, while Festival Grounds Coffee & Bar will serve speciality coffees during the day and cocktails in a lively social atmosphere later in the evening.
Dining Upgrades Expanding Across The Fleet
In addition to the new restaurants and bars, Carnival is introducing a number of enhancements that will reach ships across the fleet.
The cruise line is refreshing menus in several key dining venues, including the Main Dining Room, where guests will see new breakfast, brunch and dinner options. Updates are also planned for Lido Marketplace, including the introduction of a new Lido Family Menu featuring daily favourites aimed at younger cruisers.
BlueIguana Cantina will receive rotating daily specials as part of the overhaul.
Carnival is also introducing Bagels @ Sea, offering freshly baked bagels with a variety of toppings, while the Chef’s Table experience is being updated with new multi-course menus inspired by regional flavours.
Additional casual options are being added through a series of pop-up concepts. These include Fruity & Frosted Breakfast Bars and Ice Cream and Milkshake Bars on Excel-class ships, alongside other rotating food experiences across the fleet.

Technology and convenience are also a key part of the programme. Carnival plans to expand mobile ordering and collection options for its coffee venues, making it easier for guests to grab drinks on the go.
Meanwhile, a new Express Dining service in the Main Dining Room is intended to provide a quicker dining experience for passengers who prefer a faster meal without sacrificing the traditional restaurant setting.
The announcement represents one of Carnival’s most significant food and beverage investments in recent years, as the line continues to evolve its onboard dining offerings ahead of the arrivals of Carnival Festivale and Carnival Tropicale later this decade.
