Holland America Line is rolling out a new programme across the fleet, where fresh fish will be sourced from 60 different ports worldwide.

Under the new plans, the fleet will start to source fish from all corners of the globe, ensuring that the fresh options go from port to plate within 48 hours to offer the best flavours.
Some of the ships will already start to benefit immediately, as the fish options are added to dining venues this week (w/c 18th September 2023). Eventually there will be 80 different types of fish brought to the menus, though obviously not all at once – it will depend on where the ship is sailing.
There will also be a new pop-up fish restaurant on every ship in the fleet, which will begin rolling out in November 2023 and will expand across the whole fleet by the end of 2024.
It will be called Morimoto by Sea, led by Chef Masaharu Morimoto, the star of Iron Chef and Iron Chef America who will now serve as the cruise line’s Fresh Fish Ambassador.
Morimoto by Sea will be offered at least once per cruise and will be a speciality venue with a cover charge of $55 per person. Vegetarian and vegan options will be available.
